A balanced meal with protein, veggies, and carbs.
Ingredients:
1 pound ground chicken (or cooked shredded chicken)
1 cup cooked brown rice
1/2 cup diced carrots
1/2 cup chopped spinach
1 tablespoon olive oil
Instructions:
Cook the chicken in a skillet over medium heat until no longer pink.
Boil or steam the carrots until soft.
Combine the cooked chicken, rice, carrots, and spinach in a large pot.
Drizzle with olive oil and mix well.
Let it cool before serving or storing in the fridge for up to 3 days.
